In a mixing bowl, add the Orkney cheddar cheese cubes, diced apple and hazelnuts.
Drizzle with olive oil and season with salt and pepper.
Lay out a sheet of filo pastry and brush with melted butter.
Cut in to four equal size squares.
Brush the outside and repeat the process with the left over mix and pastry.
Bake in the oven for 6-8 minutes until crispy and serve.
