Bring a large pan of salted water to a rapid boil
Remove the heads of broccoli from the stem
Set up blender
Plunge the broccoli into the boiling water and cook for approx 5 minutes, until there is no resistance when pierced with a knife
Remove broccoli from water, putting straight into blender and mix on the highest setting until smooth, adding the butter and spinach
Add a little of the broccoli cooking water if it is too thick
Season to taste
Pour into a bowl that is sitting in a bowl of ice water, in order to keep its lovely green colour
Grate the Orkney cheddar
Heat the milk and cream together and add the grated Orkney Cheddar, stir until the cheese has melted
Cool down and season well with salt and pepper, add a little Tabasco
When cool, add the eggs and mix well
Divide between 4 soup bowls
Cook the royale in the oven at 90°C for approx 45 minutes
When you wiggle the bowl the royale is just set
Keep warm
Re-heat the broccoli soup
Pour over royale
Sprinkle with croutons
Serve
Tip - You can make the royale mix a day before, keep in the fridge.
